PSTR 2431 - Advanced Pastry Shop 4 credit hours. Lecture/Lab/Clinical: Two hours of lecture and two hours of lab each week. Prerequisite(s): PSTR 1401 A study of classical desserts, French and international pastries, hot and cold desserts, ice creams and ices, chocolate work, and decorations. Emphasis on advanced techniques.
